so let say you kill a deer in 70 degree weather, and the temps might get down to 60 maybe 50 at night..we all no you need to gut the deer as soon as possible..
should you skin it as soon as possible? and then hang it or leave the skin on? I,m a firm beliver that deer taste better when you do it like it suppose top be...

skin acts like an insulator.
recommend packing the carcass with ice

Like covering a keg with a blanket to keep in the cold. Same kinda thing in hot weather hunting.
I'm sure it's not an easy task to accomplish either. Early deer season can be just like that here in central NY.

[B]That's the only nice thing about it getting cold out. You can safely hang a deer overnight. I usually run them off to the butcher as soon as possible. I have yet to have to keep one overnight over 50 degrees but I think I would pack it in ice rather than skin it.[/B]

Quarter it out and put in ice chest with ice bottles.

I was just wondering about the deer my brotherlaw shot this year...it got down to the 50's at night and 70's during the day and we let it hang out in the woods for a day and a night before skinning it...the flys were terrible.. I don't no if pulling off the skin would make it cool down better or not...

he whats to smoke a backstrap for thanksgiving...my sister having it over at her house with his parents coming in from florida....I don't no if that's the smartest thing is to have is uncured smoked backstraps on thanksgiving...

i'm not the type of guy that whats to hurt his feelings or anything, but that deer is not going to go over good at thanksgiving..theres going to be a lot of old women over there from florida...

I don't no why he always whats to have deer meat at thanksgiving or Christmas...one year he boiled and grilled a deer forearm.. I said dude this is thanksgiving...like I want deer forearm and gravy...

the thing about deer is before you do anything to it is to cut all the fat silverskin and all the nasty stuff before eating..take the time and trim it right..

LOL...


Leaving the hide on helped protect some meat from flies but it didn't help it cool much, LOL.

If you'd asked about leaving it overnight, I'd say you were good to go with overnight temps in the 50's and touching on borderline in the 60's, but you said a day AND a night so that's a game changer.

I'd say make it into chili and have a lot of toilet paper handy...and make sure the second or third bathrooms are working .

I've kept the deer in a cooler with ice bottles for a few days before I could get to processing. Your meat stays cold and dry.

If it's that warm; my preference is to gut ASAP, skin ASAP and get it in a meat cooler ASAP...then I can age as I want with a controlled temp. I normally age meat in a cooler without hide on. If it's good and cold out (below freezing at night) sometimes I let it hang over night, then skin and put in the meat locker the next day.

I gut right away, and then I get it to my vehicle and put it in a heavy brown and silver tarp, I then go to the closest place to get ice and get 40-50lbs of ice, I then put 10lbs in the chest, 10 in the gut area and 20-30lbs of ice along the back and then rap the tarp as tight as possible, never had a problem over night in temps up to 60 degree's..
