This is my new briner bucket thingy. No need to flip the bird any more.

What's the purpose of the multi-level shelf? Is it so you can brine two different things at the same time and keep them divided?

The shelf is what keeps the meat under the brine. By inserting it in the slot and then rotating, the meat stays below shelf. The last pic shows the turkey under the brine.

But there's always a little bit of whatever you're brining tits-up at the top of the brine, right? The shelf just pushes *most* of it down (?) or am I missing something? How high does something usually ride in a brine? I've only done a limited amount of this and everything has pretty much stayed sunk as a stone. My pork loins are like the oysters of the brine pot.
