After the discussion we had on cheesy grits a few weeks back I got a hankerin so had to make up a batch.

For you Yankees out there, you are missing out. They are easy to make and super delicious. They are excellent as leftovers too.

Outstanding! Extra points for the asparagus (for no particular reason other than the fact that I really, really like asparagus.)

I now await your taking it up a notch and posting your try at shrimp and grits.
3.) bluecat - 04/21/2014
Tell me what I need to do other than add a whole bunch of shrimp. Sounds delicious.

Shrimp and grits is a southern classic for which there are as many versions as there are southern cooks. Just Google "Shrimp and grits" and "recipe" and pick one that sounds easy and good. My personal favorite is a variation that is done by a local gulf seafood place that involves pan-baked grits covered in shrimp gumbo. The bottom of the grits get a slightly crunchy texture from contact with the oiled pan they're baked in, and the gumbo is outstanding even on its own. Combine the two and its to die for. When its not crawfish season the grits-and-gumbo is my go-to order.

Speaking of which...here are some friends I invited to the house on Saturday. They're eagerly awaiting their chance to party in the Jacuzzi like I promised them...

If you REALLY want to live it up, bury a decent pan-seared or grilled steak under your shrimp and cheese grits...After that I'm pretty sure you'll need a nap, LOL...

Use a bit of lime in the marinade or wherever else you might see an opportunity. It kinda kicks the surf n turf thing off really nicely...

That sounds worth trying. One of the best things I've ever eaten was a Cajun blackened slice of prime rib covered in a creamy crawfish sauce at a little place in Biloxi, MS. I was hesitant at first because prime rib is one of those things that I tend to be a purist about. But it sounded so outlandish that I was compelled to give it a try. Absolutely delocious, and easy to reproduce.

BTW, I think Bluecat's plate up there ought to win some type of award from Michelle Obama for representing a lot of the food groups...How many are there now...fourteen? Not counting tofu...
8.) Swamp Fox - 04/21/2014
Yeah, at first blush I don't like to drown a piece of good meat in a sauce...Did I ever tell the story about the froggy white sauce I found all over my uptown rabbit medallions one time? :wink

Do it with a run-of-the-mill NY strip...when the strip steak and the shrimp are on sale at the same time, that's when you know the stars have aligned and the gods are trying to tell you something.

Those plates are a sore subject. Came home one day and wifey had picked them out with my mother-in-law. They were both beaming.

I think they are horrendous.

Don't be too hard on her. Bed, Bath and Beyond was probably all out of stock on the Dale Earnhardt Commemorative Series that day.
11.) Swamp Fox - 04/21/2014
LOL...

I might have some that are worse...Girls bring me a plate of food out of pity every once in a while and then never come back to collect the dishes...A lot of disconnected phone numbers, too...
12.) bluecat - 04/21/2014
She says they are so colorful. I tell her that white is a color too.
13.) Swamp Fox - 04/21/2014
Well, at least you put your foot down about the country wainscoting in the living room...right?

:-)

You ever say to her, "Oh, sure, but the cat can waltz right in...!"

BTW...how nerdy am I that the first image that popped into my head when I read the "...y Grits" part of the title was this?

Well she looks pissed so if she made you grits you had better finish your plate.
