EH HEM...

BILLY BOY. BREAKING OUT THE BRADLEY FOR THE LAST HURRAH BEFORE WE BUY THE SMOKIN TEX (ASSUMING IT'S STILL THE SHIZ OR......... YOU MESS WITH ME AGAIN :tu:)

ANY CHANCE YOU CAN HELP WITH YOUR PEPPER RECIPE??

STUFF PEPPERS WITH CHICKEN & CHEESE, WRAP WITH BACON ??? SMOKED FOR HOW LONG???? ANY OTHER HINTS TIPS OR TRICKS???

Glad to see you here my buddy.
Get the largest jalapeņos you can find.
Cut the back of the pepper off to remove the stem, then slice the pepper in half long ways. With a spoon dig out the ribs & seeds from the half's (if you have plastic serving gloves they well save you grief during this process). After the peppers are prepped, cube up 2 or 3 thawed chicken breasts & put them in a food processor with graded cheddar cheese,& chicken fajita seasoning & pulse the processor until the chicken is shredded & mixed with the cheese( just shredded not mush). Take the filling & fill the pepper half's generously, lay them on a cookie sheet then put in them the freezer for about an hour or so, it will make wrapping the bacon very easy. About 15 minutes before you wrap them take the bacon out of the package & let it warm up some(I use thin sliced because it gets done faster). Wrap each pepper from front to back & the bacon should stick to itself & stay on. Smoke them in your inferior smoker:grin: till the bacon looks cooked prolly 2&1/2 to 3 hours, remove & enjoy. If you want them to be hotter, leave the ribs in the pepper halves. Three breasts should make about 8 to 10 pepper half's. I usually make about 50 or so at a time & shrink wrap them with 6 or 8 in a package. You can also cook them on the grille but the bacon grease flares up bad. If this doesn't make sense, you have my number:wink

I HAVE A 200.00 GIFT CERT FOR AMAZON, SO WE FIGURED WE MIGHT AS WELL UPGRADE OUR "INFERIOR SMOKER" AND GET SOMETHING WORTH THE $$$ THAT WE CANT GO WRONG WITH. BTW, I TURNED MY BUDDY DBLUNG ON TO THE 1400 AND HE CANT SAY ENUFF ABOUT THEM... I CAN LET YOU OUT DO ME, BUT NOT HIM!!!. HERES A COUPLE PICS FROM THE FRONT YARD RECENTLY.

LIL 2X2 I TOOK THIS MORNING.

YESTERDAY WAS WEIRD. HAVE ONLY HAD THE BIG GUY COMING AROUND FOR LIKE 2 MONTHS, AND THEN ALL OF A SUDDEN YESTERDAY I HAS 2 LIL SPIKES THAT SEEMED LIKE THEY WERE SO SMALL LIKE THEY WERE IMPORTED DEER SOR SOMETHING, THEN I HAD THAT 2X2 HARD HORN AND ANOTHER HARD HORN WHITE ANTLERED AND THE BIG GUY IN A 3 FOOT SECTION. I HAD TO SHAKE MY HEAD LIKE I NEEDED MORE COFFEE, WHISKEY OR SLEEP. THEY WERE ALL LICKING THE AIR AND I SWEAR THE BIG GUY ALMOST KICKED ONE OF THE PYGMY SPIKES CAUSE HE WAS TOO CLOSE.

THE DARK 2X2 WENT TO SPAR WITH THE BIG GUY AND HIS RACK FIT IN THE MIDDLE WITH ROOM TO SPARE SO HE LEFT AND LOCKED UP WITH OLD CRACKER ANTLER. AND THEN THEY ALL WENT SEPARATE WAYS IN A COUPLE MINS. WAS GREAT TO SEE SO MUCH AND DIFF ANTLER TYPES WITH VELVET AND HARD HORNS. DAMN NEAR BROKE MY TOE TRYING TO GET TO CAMERA, JUST MISSED THE WHOLE GROUP PIC.
